As a longtime lover of banana pudding, this yogurt banana pudding cup from WW Homecoming Cookbook grabbed my attention right away.  Cool, creamy, and full of banana flavor, it’s equally good for dessert or breakfast.

I love that it comes together in minutes with just four basic ingredients, no stove or cooking experience required. If you’ve got a banana, graham crackers and yogurt, this delicious sweet satisfying treat is only minutes away!

How to Make Skinny Banana Pudding with Yogurt

Step 1: Gather and Prep your ingredients:

  • ¾ of one whole graham cracker sheet (3 squares)
  • 1 large ripe banana
  • ¼ cup plain nonfat greek yogurt (Vegan variation: opt for unsweetened coconut or soy yogurt)
  • ¼ teaspoon vanilla extract

Step 2: Crumble 1 graham cracker square into 8 ounce glass.

Step 3: Slice ½ of the banana into ¼-inch thick rounds and place in glass.

Step 4: In a small bowl (affiliate link) mash the remaining ½ banana with a fork until it’s smooth. Stir in the yogurt and vanilla until well blended. Crumble 1 graham cracker square and stir it into the banana/yogurt mixture.

Step 4: Pour/scrape mixture into the glass over the sliced bananas. Crush remaining graham cracker and sprinkle on top. Enjoy right away or cover and chill for up to 12 hours.

The recipes comes together in minutes making a deliciously easy and healthy dessert or breakfast. Though WW suggested using plain coconut yogurt to keep the recipe vegan, I substituted plain Greek yogurt. Use whatever kind of yogurt you prefer or have on hand. 

The original recipe was written to make four servings. Not wanting leftovers, I turned it into a single-serving treat that can be multiplied as many times as you like.
